Do you ever do that thing where you save hundreds of recipes with the good intention of making them and then…uh…never do?
Yeah, me either.
Except that I do it all the time (except for the lovely cake pictured above–I made that last week). Sometimes I wander back through this old recipe lane and discover that I would indeed still like to try these dishes. I’ve listed some of the recipes currently inspiring my cravings below, in case you are looking to add to your recipe archive as well. You’re welcome.
Carne asada bowls: There is the tapas place located dangerously close to our apartment. We ate there recently (i.e., yesterday) and ordered the carne asada, and now I can’t stop thinking about it. I love how it is both spicy and spiced. As a bonus, this recipe feels like you could easily make a big batch and eat it all week for lunch.
Aguadito de pollo: My mother passed down to me a deep love for soup. Now, I actually hate cilantro, but in the comfort of my own kitchen I can substitute whatever I want (probably lots of parsley and chives) and no one can say anything about it.
Potatoes Anna: I don’t think that a reasonable person can turn down any sort of roasted, buttery potato dish. I want this and I don’t care that it’s summer or that our tiny apartment gets super hot as soon as I so much as glance at the oven. I won’t be put off.
Baked eggplant with polenta: I love eating full meals out of bowls! I also love polenta and don’t eat it nearly often enough. This recipe might be a hard sell to my boyfriend, but he does agree that we should try to eat vegetarian meals more often. I suspect that hiding eggplant under layers of breadcrumbs and tomato sauce might be enough to convince him that we should make this as soon as possible.
Lemonies: Because brownies are the best and lemon desserts are also the best and this seems genius!
